2012 July 4 - #10 TSING TAO CLONE from austinhomebrew.com OG= 1.055 (2.5 gallon batch)
3lbs extra pale extract
¼ lb crystal 10L malt grains
½ lb rice syrup solids
White Labs American Pilsner Lager WLP840
BrewVint Yeast Fuel ½ pill
.5% alcohol boost
bittering ¼ oz Tettnang, 3/8 oz Saaz
flavoring 1/8 oz Saaz
fermenting at 55F
7/13/2012 -  OG=1.020 at 65F ( recalculated to 59F OG = 1.020). I might as well wait the 14 days. It was still highly carbonated and clouded. Strong healthy yeast smell. Tasted good.
7/17/2012 gravity =1.017 at 63F
7/18/2012-1.015 gravity at 63F
7/19/2012 -1.015 gravity at 63F – 4.9%ABV. The liquid yeast makes less sediment or maybe they were still active floating around? Tasted fine. Bottled.

8/2/2012 – first bottle in the fridge for 3-4 days was sour. Possible contamination or yeast still active and not completely settled out. It could be a Belgian beer. Alison noted that it tasted like saki – probably due to the rice solids.
8/11/2012 – the next 2 bottles were still sour.
8/14/2012 – It's now a Belgian lager!
